After reading this, go down and read my other reply. This Gentleman did a really great job with this educational video, he is a Professor now! Just want to say one more thing as I drink my stuff, I fermented some of mine with Strawberry & Watermelon juice and added Welch's Grape juice, WOW< THERE IS THE TICKET PEOPLE, Call it Catskill De Witt, yeah, it's DUTCH!

Brother, all I can say! Hey, I live in the Catskill Mountains and actually in the woods with a running spring off the mountain. I can send ya some, your water looks like it had a little foam floating on the top, you using town water? DON'T! As for the winter months, I bought a heating mat for starting seeds, I guess a cheap heating pad would work on low setting, use these, heat rises and I cover the entire containers with an insulated shirt! You should always ferment your stuff in complete darkness!

yes. i just use liter or gallon 100% juice and sugar. Take out a cup of juice per liter, put in a cup of sugar per liter (as in, take out as much juice as you put in sugar)...pitch your yeast, slap on an airlock, wait a week and you'll be at about 7% give or take. I use a Champagne yeast for my brews...be sure to follow sanitary guidelines too. This is cheap, but it can be screwed up if you aren't sanitary. I am literally drinking a homemade cider right now using this exact technique. And if you take care it's delicious as well as cheap. At this moment I have a liter of grape/apple nearly finished and a recently started gallon of apple juice to which I added 2 cups of honey (I removed 2 cups of juice for space). I think this is called a "cyser" but I am not sure. I am certain it foamed up like a bastard and made my airlock look like death. I cleaned that shit. I also live in Oregon and grow my own weed legally. I have an extremely privileged life, if I think about it.

I plan on making two things with this. A very simple sugar wine like what you did, and strictly use it for mixing in my morning orange juice, to make a more economical streamlined version of the Mimosa. The other is mead. I bought two of those turn key easy flow bee hives because I can't afford to buy bulk honey all the time If I am getting wasted on mead year round. I was going to use Altotecs TurboCarbon and TurboClear to tighten up the colors, taste and smell. I would think it'd be more important for the sugar wine because of it's role as a mixer and you'd obviously want a very inert flavor and scent profile. Cheap is my #1 goal. I am tired of buying malt liquor when I could be getting drunk on better quality, home made booze. Whoops I rambled...My question is have you used those two products from Altotec? If so what do you think? Would you also recommend adding some potassium sorbate to kill off unwanted fermentation?

After fermintation wait 2 weeks then rack it in another container leaving behind as much trub as possible. Use a degasser wand to degass the mix. Add liquid carbon this will remove the yeast flavor and help neutralize. Wait three days de gass every day. Then add turbo clear 2 part follow the directions rack off 3 days later add chitosen then wait 1 week re rack to get off final sediment. You will have a no flavor alcohol. At this point you could add flavoring a whiskey essence, rum, vodka, Brandy any of these will make a nice 20% Liquor spirit.

How about instead of mix drinks, distilling it?! Sell that mic, and some of your video equipment, get a keg, and spend maybe 50-100 bucks on various copper tube and fittings and voila!

This is so funny... I was LOLing so hard when we got to 12 fingers my spousal unit had to come have a looksee too! BUT...Ummm I'm a biochemist. I wonder if there might be some nutrients in the yeast packet that should be left behind by distilling. Boron/Borax for example. Yeast need a pinch but it is often used as a pH buffer in higher quantity for many applications like this. A little is ok but drinking in quantity will add up to trouble. other thoughts have I too. I want you to know that it is ok if you say one half or half n half or hefalumps. I think that commenter is a little half vast hissownself donchano

So, If I were to caramelize double the amount of sugar needed to produce the 20% alcohol, Boil with just enough water to give it a nice consistency whilst adding some good coffee for added flavour. Then cool before adding some Turbo Yeast, would this become a 20% Caramel/Coffee liqueur when fermenting is complete?..

i have done several batches with alcotec but there is something off with the flavor, i suspect that they add other chemicals besides yeast that alter flavor as the yeast is intended to be used for distilling later where those chemicals wont apoear in the distillate. But to each their own.

Produces no harmful methanol. This is not distilled. It is the distillation process which produces dangerous levels of methanol. Personally i have never used a clearing agent. Once the batch was finished i was unwilling to wait the extra time to clear it. Thus mine has a slight taste of yeast, which i hide by using it in mixed drinks. It will settle some, if you just let it sit. Ten days would be excellent if you can wait that long.

After 8 days, DO NOT bottle it. Like the guy nearly says, it tastes disgusting. What you do is to treat it with "TurboKlar". Cheap on ebay. This will pull the sediment to the bottom. After only a day you will see considerable clarity. It clears more daily till it eventually becomes crystal clear. 2 weeks or so. It still tastes bad but is quite good for mixing. I pour half beer, half 20% sugar wine and have no trouble sleeping. If you filter it through "activated charcoal", you will remove the horrible taste.

It's best to put the heat belt as low on the bucket as possible, because all of the warm water is going to rise to the top, so that will keep warming the sinking cold water without overheating the hot water and killing yeast.

Yeah I like to mix mine with grape juice and hey honestly bread yeast, they have done a study and it HAS made up to 12% its just the flavor is undesired to wine snobs. We are not wine snobs. I remember when I was a kid like 16 and I made my first batch and took it to a party and the people were skeptical at first and it had them floored by the end of the night, then they began to make it after.

Decent wine or ale yeast is super cheap and tastes way better than bread yeast. Just get that. Don't have to be a snob to pay 1.00 for some yeast.

Add a few ounces of 100 proof vodka per quart to store at room temp forever and kill any left over yeast. Eventually it'll settle on it's own and you can siphon the clear stuff.

+Piano Man42 Preparing the wash for drinking instead of distilling is hooch.  Hooch is hooch, its purpose is just to get you drunk. But yes, as long as you use good vodka and let it sit for a month or three you can siphon it and get better tasting hooch. Koolaid still recommended.  lol

+tomken8dy I never considered this, will the addition of the vodka improve the clarity of the wash as well?. If the left over yeast dies, then it drops, so it would consequently improve the taste, correct? I use chitosan and Kiesol or whatever that 2 part liquid stuff is. It clarifies it pretty good, but the wash still tastes horrible no matter how you flavor it.
