Trdelník is a traditional Slovak cake and sweet pastry, originally coming from Hungarian-speaking part of Transylvania, Romania. It also is known within the culinary heritages of other European countries like Hungary, the Czech Republic and Austria. It is made from rolled dough that is wrapped around a stick, then grilled and topped with sugar and walnut mix. Nowadays, trdelník is very popular among tourists as a sweet pastry in Slovakia and the Czech Republic. Skalický trdelník was registered in December 2007 as PGI (protected geographical indication) in the European Union. The registration application with the detailed description of the product was published in April 2007 in the Official Journal of the European Union. The production of trdelník has a long tradition in the Slovak town of Skalica near the borders with Czech Republic. The original recipe was brought to Skalica at the end of the 18th century by a transylvanian cook of József Gvadányi, a Hungarian general in retirement. The original recipe was afterwards improved by the inhabitants of Skalica to its final form nowadays known as Skalický trdelník. The civil association Skalický trdelník was founded at the end of 2004 with the goal of keeping the tradition of the original open fire Trdelník production. The name trdelník comes from trdlo, the wooden stake the cake is wrapped around for cooking which gives it its traditional hollow shape.

This (not so secret place for Londoners) is a bakery which we've been visiting now for around 25 years. You can come here safe in the knowledge that it will be always be open 24-7, 365..........this shop is one of London's most special places. Why is this our favourite place? simply because the prices here are very much affordable, so much so that anyone can come here in the knowledge that they can eat something filling without it costing a fortune - where else can you buy a beigel for 0.30 pence!!! Spend 10 to 15 minutes standing in the shop (and eating) and you'll see all walks of life come into the shop rich or poor: low, middle & upper classes can allbe seen as customers in the shop, At 4:00am you would get a slice of London in that Bagel shop, night clubbers leaving the clubs, hookers, police, night shift workers, taxi & minicab drivers etc all eating a salt beef bagel with a cup of tea. The best place to stand when eating in the shop, we reckon its right by the window on a Sunday afternoon (on market day). They can get extraordinarily busy with queues very often snaking out of the door, especially on Sundays or in the night time when nightclubbers come in droves, well past midnight & into the early hours - the speed of service is second to none; so if you're in a rush you'll never be waiting for too long. Our favourite munch here is: * A beigel with cream cheese. * Onion platzel with butter & cheese with their soup.......it's been our first choice when I come here. The menu is focused on beigels, which are baked in the traditional Jewish style with fillings such as hot salt beef with mustard, chopped herring, and cream cheese and salmon. They also produce pastries and sweets treats such as Danish rolls, apple strudel, Eccles cakes and cheesecake, as well as white, rye and black bread. Beigel Bake produce well 2000 to 3000 beigels daily. Sammy the part owner has been running the shop for nearly since 1974 and there's no secret to the beigel recipe; he says that the ingredients include: flour, warm water, sugar, malt flour, salt and yeast. This is the shop that never closes, (it stays open 24 hours a day, 7 days, 365 days a year) so anyone can come here anytime of the day or night. A very special thank you to Sami & his team who welcomed us and graciously allowed us a privileged glimpse into their kitchen to do the videoing. Having spent a day in this bakery, I now have major respect for bakers! damn they work so hard! Harder then I ever thought!. Vegi-scallops - Vegetarians seem to have been dealt a bad hand by the canned foods industry. Armadillo - Players of games like Red Dead Redemption will be familiar with the meat and skin of armadillo and selling them for money. Beaver meat - The majority of canned beaver meat sold is for dogs. Fish Assholes - Somewhere at some point someone has thought “you know what we need to eat? Fish assholes.” Silkworm - This is the kind of thing used as a punishing dare for most. However the fact that this is sold in a can indicates a need for a long shelf life, and a place in the kitchen of numerous households. Roasted crickets (with eggs) - When crickets make their way into food, it tends to get that restaurant shut down. Fish Mouths - Some of the foods in this list have been down right disgusting, but fish mouths are up there with the strangest of them all. SUBSCRIBE NOW: https://www.youtube.com/user/BrothersGreenEats?sub_confirmation=1 -Recipe - 300 grams - whole wheat flower 300 grams - all purpose or bread flour 512 grams - water 63 grams - starter 10 grams salt Milling flour - I’m aware that most people don’t have their own flour mill, so this step is optional, and if you don’t find your self some decent whole wheat flour. If you do mill your own flour make sure you sift some of the bran out to create a high extraction flour and a product that is a little easier to work with Steps and timing - Adjust timing to your schedule! 3:00pm - combine flour with water and let it sit for at least 1 hour. Ideally you wait 4-5 hours but its not necessary. This step is called Autolyse which hydrates the flour and also develops some sugars in the flour for a better end result 3:00pm feed your starter equal parts (by weight) flour and water and let sit for 4-5 hours until active 7-8:00pm - add the starter to the dough and start your stretch and folds every thirty minutes for the first 2 hours of the bulk rise. On the second or 3rd stretch and fold, add your seasoning of choice to the dough. 10:00pm - stretch and folds are done, cover and let it bulk rise/ferment overnight. 7:00am - dough has risen, give it one last stretch and fold and remove it on the work surface to bench rest for 20-30 minutes. 7:30am - form loaf and place in some sort of proofing basket for 1-2 hours until it has risen (like in video). 8:30am- Preheat heavy pan with lid on at 500 degrees for 1 hour 9:30am - Flip loaf out on parchment paper, score the loaf and transfer to the pan. Put lid on and bake for 20 minutes 9:50am - take lid of, turn over down to 450 and bake uncovered for 20 more minutes let cool if possible (usually not…) and enjoy! Please Subscribe for 3x Videos Per Week + Live Broadcasts! http://ThomasDeLauer.com High Carb Foods to Avoid on a Low Carb Diet: Thomas DeLauer… Sugar Alcohols: Sugar alcohols are a hybrid between a sugar molecule and an alcohol molecule - but are neither one nor the other. A sugar alcohol is also known as a polyol and can be classified as a carb - most are derived from corn starch from genetically modified corn. Commonly included in most sugar free and “low-carb” products, but they do have a caloric/carb value. Each gram of a sugar alcohol turns into anywhere from less than 1 to as much as 3 calories. Use of Sugar Alcohols: Sugar alcohols are slowly and incompletely absorbed in the body. Once they are absorbed they use very little to no insulin to convert to energy as sugar alcohols are incompletely absorbed in the digestive system. A process called “passive diffusion” takes place - sugar alcohols that were consumed draw water into the bowels - results in only partial breakdown. The un-metabolized part of the sugar alcohol starts to rot, which creates a favorable environment for undesirable bacteria and pathogens to thrive and grow. How to Calculate: Subtract half of the grams of sugar alcohol listed on the food label from the total grams of carbs. Ex: Carbs: 20, Sugar Alcohol: 10, Total Carbs: 15 Fiber: Dietary fibers are considered complex carbs, but because fiber doesn’t raise blood glucose, low-carb dieters don’t “count” fiber since our body’s digestive enzymes can’t break it down. Fiber can provide calories, not as glucose, but as products of fermentation in the colon, similar to a sugar alcohol. Some fibers, called soluble fibers, either absorb water and become gels or dissolve in water and reach the intestine where they are digested by bacteria. As they are digested by bacteria, soluble fibers produce short-chain fatty acids (SCFAs) that provide your body energy. The FDA estimates that fibers fermented by bacteria provide about 2 calories per gram of fiber. Insoluble fibers travel to the intestine with very little change. Instead of being digested, insoluble fibers increase bulk, soften stool, and shorten transit time through the gastrointestinal tract. Starchy Vegetables: (corn, peas, squash, lima beans) Starchy foods are often referred to as 'carbs' because they have such a high carb count - there are many types of vegetables, referred to as starchy vegetables, that are actually fairly high in carbs. For example: 1-cup of cooked sweet corn contains about 31 grams of total carbs, including 3.6 grams of fiber, 6.8 grams of sugar. A cup of cooked peas provides 25 grams of total carbohydrates, 8.8 grams of fiber and 9.5 grams of sugar. 1 Medium-sized potato contains 37 grams of carbs, 4 of which are fiber. All digestible starch gets turned into sugar as it passes through the digestive tract - results in elevations in blood sugar and dangerously higher insulin levels. This means that even seemingly healthy food choices can lead to increases in blood sugar and insulin, which can lead to insulin resistance, prediabetes, or diabetes. How To Make A Trotter Terrine Using Plastic Wrap Pt 1

The wrapping technique can be used for any sort of braised meat product including duck legs, chicken thighs, oxtail, ect. The braised meat can be seasoned how ever you like, and is cured out with 2% kosher salt with 0.2% sodium nitrite added (calculated based on salt's weight), with the weight of the meat always being 100% (just like the baker's percentage). If you want to serve this terrine hot, I would recommend adding 0.8% Activa RM (Transglutiminase), although this is optional. Ingredients Used In Final Meat Mix - 3000g Trotter Meat, Braised and Peeled - 60g Kosher Salt (3,000 x .02 = 60g) - 0.12g Sodium Nitrite (60g salt x .02 = 0.12g Sodium Nitrite) - 5g White Pepper, Finely Ground - 24g Activa RM (Optional) - 20g Dijon Mustard - 1b Parsley, Chopped - 1/2b Tarragon, Leaves Only - 4 Onions, Julienned and Carmelized (800g after being cooked) Quick Tip: Since most people don't have a scale that is accurate to 1/100th of a gram, I would recommend making a larger batch of curing salt. The extra cure mix can be saved, and used for stuff like duck prosciutto, confit, or pancetta (videos to come). Weight out 500g of Kosher Salt and add to it 2g of sodium nitrite. Mix thoroughly, label properly and keep away from children. The sodium nitrite in this recipe is optional, although if you leave it out, I would recommend bringing the kosher salt content up to 3% by weight and only curing your terrine for no longer then a month. You will also loose that pink, rosy color that is commonly associated with cured foods.

Cancer is an abnormal growth of cells. There are more than 100 types of cancer, including breast cancer, skin cancer, lung cancer, colon cancer, prostate cancer, and lymphoma. Possible signs and symptoms include a lump, abnormal bleeding, prolonged cough, unexplained weight loss and a change in bowel movements. Many cancers can be prevented by not smoking, maintaining a healthy weight, not drinking too much alcohol, eating plenty of vegetables, fruits and whole grains, not eating too much processed and red meat, and by avoiding many cancer causing foods that we have listed below. Microwave popcorn bags are lined with perfluorooctanoic acid, a compound that has been linked to various types of cancer, including liver, testicular and pancreatic cancer. Canned foods allow you to enjoy your favorite vegetables throughout the year. However, if you are concerned about your health, avoid canned food, especially canned tomatoes. The cans used to pack tomatoes and other foods are lined with a product called bisphenol A, BPA, an endocrine disruptor that may mimic or disrupt hormones and increase the risks for breast cancer, prostate cancer, early puberty, metabolic disorders, infertility, and several other problems. Farmed salmon is nowhere near as healthy as wild salmon, and eating farmed salmon puts you at a higher risk of developing cancer. Farm-raised fish are fed unnatural diets and contaminated with chemicals, antibiotics, pesticides and other known carcinogens found in materials like asbestos. Hydrogenated oils are vegetable oils, which cannot be naturally extracted like olive oil, soy or canola oil, they are chemically extracted from vegetables and is again chemically treated to change the smell and taste. This process turns unsaturated fat into a stable solid fat, resulting in trans fatty hydrogenated oil which is considered to be the worst type of fat and is known to cause cancer, heart disease, and immune system problems. Potato chips are deep-fried in temperatures above 120 degrees Celsius, which causes them to create a material called acrylamide, a well-known carcinogen found in cigarettes. Genetically modified foods (GMOs) are a rapidly growing industry and have made their way into the majority of our foods like corn, potatoes, grains and soybeans. Such food products are grown using harmful chemicals and, when consumed, can lead to immune system, brain and liver damage. Refined sugar, artificial sweeteners and fructose-rich sweeteners like high-fructose corn syrup are not good for your health. These products tend to rapidly spike insulin levels and feed the growth of cancer cells. Refined White flour contains excess carbohydrates that are not good for your health and even increase the risk of cancer. During the milling process, white flour is bleached with chlorine gas, which is highly toxic for the body. Processed meats such as ham, sausage and bacon have chemicals and preservatives like sodium nitrates, which make them bad for your health. In addition, processed meat contains excessive salt, which is also not good for you. Pickled and smoked foods are delicious but, at the same time, very harmful to the body. In fact, smoked meats that pick up tar from the smoking process cause extreme harm to your body. Plus, most pickled foods contain nitrates that turn into N-nitroso, which increases your risk of cancer.

Žlikrofi is small dumplings cooked in hot water and filled with potato, onion, minced lard or smoked bacon, herbs and spices, which originated in the old mining town of Idrija at the end of the 18th or the beginning of the 19th century. They served with the typical meat sauce, baklava, made from mutton or rabbit meat. They are also served as an independent dish with pork cracklings or butter, or as a side dish. 2. This is a round originally unleavened flat bread (3-4 cm thick) brushed with a beaten egg and sprinkled with caraway seeds and salt. Before baking, a square net pattern is cut into the surface of the pogaca with a knife. Bela Krajina pogaca is served warm and is not cut but individual squares are broken away by hand. 3. In the region of Primorska traditional Slovenian dish is also polenta, which was often used as a replacement for bread. Polenta is made from boiled cornmeal. The region of Koroška is known for the special way how they cook polenta: first, they dry fry the flour and then they water it with salted water and at the end they add fat. 4. Is one of the oldest Slovenian dishes and is cooked pot barley. In some regions, beans are added to it and it is even more delicious if a sausage, smoked ribs or a piece of smoked pork is added to the stew while cooking. 5. Jota comes from Istria and is a thick stew made of sour cabbage and beans. In the Karst and Vipava, they add in jota also potato. Now also carrots, celery, peas, pot barley and other ingredients can be added to it. 6. Kranjska is sausage and is one of the most famous Slovenian dishes. It comes from Gorenjska and is based on the rich heritage of processing pork into meat products. Kranjska sausage is also a protected product, for which certified recipe prescribes supreme pork, bacon fat, garlic, pepper, salt and pig’s intestine. 7. Štruklji are the most common Slovenian dish and is eaten in all Slovenian regions. They are made from different types of dough (filo pastry, leavened dough, puff pastry, noodle, buckwheat and potato dough). They can have different fillings (cheese, walnut, apple, etc.). They can be baked or cooked, sweet or savoury. Štruklji filled with tarragon are the most known in Slovenia. 8. Slovenian can prepare more than 70 different fillings for potica, which is made from different types of dough. Potica filled with tarragon is the most typical Slovenian one. Other typical fillings include walnuts, poppy seeds, pork cracklings, chives, lovage, cheese and others. 9. Is on of the most famous Slovenian dishes from Prekmurje. However, unlike the real deal carrot cake, this raw carrot cake is healthy and super easy to make. The first time I made this raw carrot cake, I made it into a traditional style layer cake. It looked beautiful, but it was too much work. So the second time I made it, I turned it into a simple two-layer carrot cake with icing just on the top. This recipe utilizes a natural sweetness of carrots and dates, a flour-like texture of ground coconut, and cream-like consistency of blended cashews. You'll need just a small slice to feel full for quite some time. Mix yeast, maple syrup, and warm water in a bowl and let sit for 5-10 minutes. 2. Mix salt and flour in bowl. 3. Add yeast water and another 1.5 cups of water and mix and knead thoroughly. 4. Let it sit covered at room temp for 20 minutes. Preheat to 400 F or 205 C. 5. Place loaf on baking sheet with parchment paper or a silicon baking mat and bake for 40 minutes. Mix starter, warm water, goji berries, and fennel. Stir and wait 5 minutes. 2. Mix flour, salt, and chopped walnuts. 3. Knead for 5 minutes, cover. 4. Let sit for 20 minutes, knead, cover and let sit for 60 minutes. 5. Place on tray and bake for 40 minutes at 275 F (190 C). - Gluten Free Loaf - 2 cups cassava flour 1 cup buckwheat flour 2 cup almond flour 2 tsp maple syrup 1/2 tsp salt 1 cup plant milk 1 cup water 1. Mix yeast, maple syrup, and warm water in a bowl and let sit for 5-10 minutes. 2. Mix dry ingredients and then add yeast water, 1 cup plant milk, and 1/2 cup water. 3. Knead thoroughly for 5 minutes. 4. Let sit for 60 minutes and preheat at 375 F (190 C). 5. Place on non-stick tray and bake for 40 minutes. 6. Cry because it isn't that good. - Sourdough Starter - Day 1: Mix 3.5 tbsp whole wheat with 0.25 cups juice. Cover and set aside at room temp and stir vigorously 2-3 times over they day. Day 2: Stir 2-3 times. Day 3: Add 2 tbsp of flour and 2 tbsp juice. Continue stir schedule. Day 4: Continue stir schedule. Day 5: Add 5 tbsp flour, 3 tbsp water. Day 6: Add 0.5 cup flour and 0.25-0.33 cups non-chlorinated water.

Southern Comfort Food ~ Simply Delicious Easy and filling. Pinto Beans , Washed and picked though. Add water to cover 1-2 inch over beans. Salt, pepper and butter to taste. Onions, garlic or whatever you want to flavor your beans. Cook 2-3 hours or more until tender. Checking to make sure water level is over the beans. Cornbread (Basic) Recipe (in your pocket recipe) 2 c yellow cornmeal 1 c all purpose flour 1 tsp baking soda 1 T baking powder 2 c milk 1/4 c sugar Mix by hand until smooth and place in a glass baking dish. Prior to mixing your batter, cook a few slices of bacon in the oven in your glass baking dish. Remove the bacon and mix in the bacon grease into your cornbread batter. Bake 35-45 minutes. Cornbread will be solid with a fluffy but sturdy crumb.
