Old Fashioned Buttermilk Biscuits - The Hillbilly Kitchen

When I was a little girl growing up in the north Georgia mountains, we all got up with the crowing of the rooster. For a long time we lived with my Granny and Paw because times were hard and jobs were scarce and on top of that, my daddy was spending his best working years recovering from a serious car wreck that almost left him crippled for the rest of his life. I could hear the ritualistic clanking of pots and pans along with granny shuffling around the kitchen on her worn out linoleum floor while I laid in bed yawning and hoping she would change her mind about getting up so early and go back to bed. The smell of smoke that soon filled my bedroom told me that Paw was throwing kindling in the pot bellied stove and that no one was going back to bed until nighttime rolled around again. Granny was simultaneously building a fire in her kitchen wood stove and before too long, the rising heat from the two stoves would run me out of bed and send me flying downstairs towards cooler air. The winter months brought snow by the foot instead of by the inch. Sometimes I dared to use Granny's spatula to scrape off some frost that had accumulated on the inside of the only window in the kitchen, so that I could peer out into the darkness, hoping to see a foot or more of freshly fallen snow that I could play in after breakfast. Granny always made buttermilk biscuits for breakfast. Sometimes we didn't have bacon or sausage or even eggs to go with them, but buttermilk biscuits with Granny's real honey was enough of a treat by themselves. I knew the biscuit making routine by heart and I could make her biscuits blindfolded because I helped her make them so many times. First she mixed 2 cups of all purpose flour with 1 tablespoon of baking powder and 1/2 teaspoon of salt and she whisked them together. Then she cut in 1/3 cup of her freshly churned butter. She added 2 tablespoons of her fresh honey to 3/4 cup of her buttermilk. She gave it a little stir then poured it in the flour and butter mixture. She threw a little flour down on her table so the dough didn't stick to the table and then she rolled out the dough and cut it into round biscuits about 1/2 inch high. After sitting in the wood stove oven at 415 degrees Fahrenheit for 15 minutes, the biscuits had risen to a few inches high and they were golden brown. Try my Granny's buttermilk biscuits. You'll want them every morning!

Tool: Wiss KSRN 8" Kitchen Shears http://amzn.to/2yZ9UIM Transcript: In this Cool Tools video review we’re going to take a look at a new pair of classic kitchen shears. These are made by Wiss, they’re Italian made and run about $30. And by using the link in the description to pick them up on Amazon you help support my videos and the Cool Tools blog. These are all-metal, multi-purpose kitchen scissors. I remember growing up with a pair like these in our kitchen. They’ve got a serious heft to them. This particular design has been made under the Wiss brand since the 1930s. And part of the appeal has always been the extra features they crammed in. This section here works as a bottle opener. Above that you have this nubby section meant for twisting off small lids. It can also work as a nut cracker or crab cracker. There’s a flat section on the handle that can be used as a small hammer. And this little protrusion on the top is supposedly used for unsealing ball jars, or generally unsealing lids that are vacuumed tight. Also, unlike the ones I grew up with, these include a deep notch on the blade that’s perfect for cutting rope, or bundles of stems, without them slipping down the blade. And because there’s a removable screw here, there’s no reason you can’t take these apart to wash them if you use them on food or something messy. It also means you can tension them up easily if they get loose. Now, the downside for these from my time with them is that the extra weight compared the other scissors in my house makes me a little nervous about dropping them. If these drop on your hardwood wood floor or your foot -- you’re going to be crying. Also, the paint on the handle started to chip after just lightweight use. I see 50 year old versions of these on eBay where the paint has held on -- so chalk that up to they just don’t make them like they used to. If you can find an old pair and restore them, that might be the best way to go. But even then, an all-metal handle isn’t super comfortable no matter what the paint looks like. So those are the Wiss 8” classic kitchen shears. You can find them on Amazon using the link in the description. Set aside. To make the drink: measure the rye whisky, Grand Marnier Salted Caramel and bitters into a mixing glass. Stir with a bar spoon to incorporate the caramel. Fill glass three-quarters with ice and stir until well chilled. Fill prepared glass with ice, strain in drink. Zest lemon over the top of the drink to release oils and then drop in. Watch how to make caramel here: http://youtu.be/muTtsJ5zo2c Recipe for Salted Caramel with Grand Marnier Makes about 1 1/4 cup 1 cup sugar 3 Tbsps. salted butter 1/2 cup heavy cream 1/2 tsp. sea salt 1/4 cup Grand Marnier Place sugar in a medium heavy bottom sauce pan, being sure it is in an even layer. Heat over medium-high heat, stir lightly as sugar starts to melt. Once sugar has started to melted, move the melted sugar away from the outside of the pan with a spoon, then stop stirring and swirl pan around a bit. Keep cooking until sugar is dark amber in color. When using a candy thermometer temp the sugar before it has all turned amber. In order to do this you will have to tilt the pan slightly (This stage is at about 340 degrees F.) Be careful as the sugar can go very dark quickly here and burn. Turn the heat off and quickly whisk in the butter -- until it is incorporated. Then add the cream and salt -- caramel will bubble up so be careful. Stir quickly to incorporate. Then stir in the Grand Marnier. Cool sauce. Place in a glass jar and store refrigerated for up to 3 weeks. Bring to room temperature before using.

Ingredients: 1 Can Mixed Fruit Cocktail 1 Box Whipped Cream or Cool Whip 1 Sponge Cake 1 Pack Instead Vanilla Pudding 1/2 Cup Powdered Sugar 1 Pack Cream Cheese  Method: 1 Mix together in a small bowl, your cream cheese and powdered sugar until smooth and juice from your cocktail fruit. 2 In another bowl mix together your instead pudding, following the instructions on the box. 3 Cut the sponge cake in small pieces. 4 Mix your whipped cream until fluffy or open a container of cool whip. 5 Now you will need a large glass bowl to display your beautiful trifle in. 6 Starting with your cream cheese, add half of your whipped cream in the bowl and fold together, after add your sponge chopped cake and fold that with your cream cheese and whipped cream. 7 Then in the large glass bowl layer your ingredients, half of your cream cheese mixture at the bottom, then a layer of vanilla pudding, the other half of your cream cheese mixture, then all your fruit cocktail evenly spreading it in the bowl.  8 After top with whipped cream and then you can sprinkle anything over the top or just leave it.  I apologize in advance if anything in this video is not clear or miss read, please follow my recipe when making this dish. Greetings! Today I am making a key lime pie as a thank you gift for Molly's best friend Allison. We were away last weekend for a band competition and she helped us out with our animals. I promised to make her favorite dessert and this is it. Key lime pie is easy and delicious! Few ingredients come together to make an amazing cool dessert perfect for your next barbecue or pot luck supper this summer. Litterally three ingredients in the filling all mix together and poured into a graham cracker pie shell. Bake for a bit then allow to cool. Top with whipped cream and refrigerate overnight for best results. I know some people will ask so there are the answers to the usual questions. Can I make this sugar free? NO Can I use something other than sweetened condensed milk? NO Can I only use one can of condensed milk? NO Is there something else I can use instead of the sour cream? NO Can I use fat free condensed milk? NO The recipe is best when made according to the directions and using the ingredients listed. Otherwise you won't get the same result I have in the video. Welcome to Bonita's Kitchen! Today we will be making Old Fashion Rice Pudding, made with only a few ingredients and so delicious. See recipe below! Ingredients: 4 cups milk 1/4 cup rice 1/4 cup sugar 1 tsp grated lemon rind 1/4 tsp salt 1/4 tsp nutmeg 1/3 cup raisins  Method: 1 Combine all ingredients together except the raisins. 2 Put in a baking dish and bake on 300ºf or 350º  for 1 1/2 hours. 3 Then stir in raisins and bake for 1/2 hour longer or until all liquid is absorbed and mixture in creamy, or bake a little longer to remove all liquid to cut in slices. 4 Serve as a dessert or anytime of the day hot or cold. 5 If you let the rice pudding cold or chill it will set and you will be able to take it out of the pan and cut in pieces to serve.  6 Serve with molasses, cream or topping of choice.  I apologize in advance if anything in this video is not clear or miss read, please follow my recipe when making this dish. Greetings! Last week I showed you my recipe for a delicious, old fashioned, chocolate or devils' food cake. This week I wanted to share with you how to make my favorite old fashioned yellow cake batter. We are going to make some cupcakes which we are topping off with both vanilla bean and Nutella butter creams. I will be sharing the Nutella buttercream in another video. I will also be sharing with you how I fill my cupcakes in yet another video coming soon so stay tuned! Making a cake from scratch is really no less work than making one from a mix and you know that I have used mixes in the past, but to be certain, it is super simple to make one from scratch and you already have what you need in your pantry and fridge to throw this together in a jiffy. I have made cupcakes with my batter but you can easily put this to work in a sheet pan, or round or square pans if you choose. This cake is moist and flavorful and the vanilla really shines through. This really does qualify as a vanilla bean cupcake so you can call it what you like. I have plans to share with you how to build on this recipe and make several different types and flavors of cake with this as a base place to start. I can't wait to share some of my other favorites. Fried, egg, crispy bacon, hash browns and French toast — everything you need for a complete tiny breakfast. Ingredients: 2 teaspoons cooking oil, divided 1 quail egg 2 tiny strips bacon 1/2 teaspoon onion, diced 1 tiny potato, diced Steps: Heat oil in a pan and fry the egg. Set aside. Fry the bacon strips in the same pan until crispy. Add more oil to the pan and add the onion and potato. Season with salt and pepper and fry the veggies until cooked through. Transfer to a plate and serve alongside bacon, eggs and tiny French toast. Greetings! Strawberry season is upon us and what goes better with strawberries than pound cake? This is my favorite thing to make strawberry shortcake with, hands down. When I was a kit, the Sara Lee all butter pound cake was a favorite treat, but then there was my grandmother's homemade butter cake that took the cake! This cake is just like that cake and something that Sara Lee aspires to be! This cake is super simple to make and uses common ingredients that you will have on hand. We all have butter, eggs, sugar, flour and milk and that is pretty much all that goes into this and then the flavorings. I have used vanilla and almond extract, but you do what you like! Make this a lemon pound cake with a bit of lemon juice and some lemon extract, or even an orange or lime pound cake. You can make a rum pound cake, a coconut pound cake or you can just have a look at what types of extracts and/or flavorings you have available to you and throw caution to the wind. I have a fabulous recipe for a five flavor pound cake that I will be sharing with you sometime in the future that is just to die for! This recipe makes a large 10 cup tube or angel food cake pan or 10 cup Bundt pan or you can do what I did and make two standard loaves with it, which is my preference because I think pound cake should be a loaf, not a round cake. No matter what shape you choose, you are going to enjoy this cake immensely! So I hope that you give this simple and delicious, old fashioned butter pound cake a try and I hope you love it! I bought an old fashioned can opener recently at the thrift store because I hadn't seen one like it in years. I kind of have a secret kitchen gadget fascination and one of the thrift stores I visit always has a good selection of older kitchen stuff. This old can opener still gets the job done and if you ever lose power at your house it's good to have something like this laying around in a drawer. I will throw this in my bug out bag and I'll always be able to open a can of beans if I have to.

Greetings! After many requests for this recipe tutorial, I am finally giving in! Old Fashioned Chocolate Mayonnaise cake is like one of those urban myths of the kitchen. I can assure you that this does exist due to the overwhelming memory factor of so many people, I just had to share this one. The best I can tell after much research and a look through my own grandmother's recipe collection, I can figure that this was nothing more than a marketing campaign by the Hellman's/Best Foods company to sell mayonnaise and extol it's virtues and versatility during the dark days of World War II when foods of a certain variety were being rationed and housewives had to make due with ingredients that were available and on hand. Nonetheless, this cake was born and this cake is delicious! You won't know that there is mayo in there, it is nothing more than a substitute for eggs and oil in the batter. This cake is rich and moist and wonderfully old fashioned. You are going to love this one! I frosted mine with my not so seven minute icing and I torched it to toast the marshmallowy goodness on top. Place the split bean and the vanilla bean pulp into a small pan with the water and sugar. Bring to a boil, and then remove from heat. Cool and store refrigerated for up to 1 month. Carbonated Cherries Recipe and Tools: 1 (10 oz) jar maraschino cherries iSi (0.5 liter/pint) Gourmet Whip 2 iSi CO2 soda chargers Instructions: Drain cherries and discard juice. With a paring knife slit each cherry from the bottom to butterfly them. Place cherries in iSi Gourmet Whip canister. Cap and seal. Charge with two iSi CO2 soda chargers, give it a light shake and then let sit refrigerated overnight. Once you are ready to serve cherries release the CO2 by squeezing the handle. It is very important that all the gas is released!! Then unscrew the top and remove cherries to a container with a tight fitting lid. Cherries will stay fizzy for about 20-25 minutes.

My friend Diane from Today's Modern Family Website texted me and asked if I had a recipe/video for caramel corn. I have not done that and since it sounded like she wanted to make this for New Year's Eve, I thought I had better get on it! Here is my version of old fashioned molasses caramel corn. This tastes like the Cracker Jack's from my youth and I love them. If you prefer a lighter caramel corn, like Fiddle Faddle or Crunch and Munch, then sub out the molasses for light corn syrup. Then you will end up with a lighter caramel with a lighter more buttery flavor. This is a little different preparation from most caramel corn recipes you will find. I have used a paper bag and the microwave as well as cooked my caramel much longer than most call for. This may take longer on the front end, but on the back end it saves you energy and it also save an hour in the oven stirring every 15 minutes! I love this method and I can whip up a very large batch of caramel corn in a short time! This is a really delicious nostalgic treat! Old Fashioned Ice Cream Social ~ Party Ideas ~ Noreen's Kitchen

Recently, I had the pleasure of helping to plan and execute an ice cream social at my church. We were hosting someone from Operation Christmas Child who had received a box 17 years ago when she lived in what was deemed a hard to reach country. Her story was so compelling and it was awesome to hear of her experience. We hosted this ice cream social after her presentation. It was a smashing success and I thought it would be fun to share how it was done. #icecreamsocial #operationchristmaschild #noreenskitchen This went together fairly quickly. We ordered the fro yo cups and wood ice cream spoons from Amazon and I picked up some table cloths and other decor pieces from the dollar store. You would be amazed at what a package of doilies will do for your look! We had both chocolate and vanilla ice cream that was scooped to order and had both cake and sugar cones available for those who liked them. I grew up with a mom who was a pastry chef and caterer. I have done my fair share of catering and party planning and this was so much fun to take part in! With a little knowledge and a list, you can get things done quick. If you know where to buy things it also makes things that much easier. Thank goodness for Amazon where you can get just about anything delivered to your door in a couple of days! This was an "Ultimate" sundae bar so we had to have toppings. These were divided into wet and dry and hot and cold. I made four sauces that included hot fudge, hot caramel and hot peanut butter and I also whipped up a simple shortcut strawberry topping. We had chocolate syrup available as well as southern favorites, wet walnuts and pecans. You can't forget the maraschino cherries and whipped cream! I used several jelly jars for the dry toppings that included candies, cookies, and even cereals along with chips and chocolates and yes, lots and lots of sprinkles. I made little signs for each jar with printer labels and a fun font that looked like the popular Rae Dunn home decor that everyone loves so much! We filtered people through the line and hand scooped ice cream that was partially donated by a local shop and everyone got to build their own treats. It was so much fun! Quick tip if you choose to do this, I set up a bread pan with some non slip and two pint jars with warm water and a couple of dollar store ice cream scoops to make scooping easy! Everyone had so much fun and we may do this again in the future. I think this would be an excellent addition to a baby or bridal shower or graduation party! Gets people involved and gets them talking. Such a great way to bring people together! This would also make a great fund raiser as well! Charge per head and make money for your cause! Pumpkin Pie - Old Fashioned Recipe - Nikonya's Kitchen

Nikonya shows us how to make an old fashioned pumpkin pie from scratch. This is a "less is more" recipe using: 2 cups pumpkin - fresh pureed (or canned - but fresh is best) 1 1/2 cup heavy cream (or 1 12 oz can of evaporated milk) 1/2 cup packed brown sugar 1/3 cup white sugar 1/2 teaspoon salt 2 eggs plus 1 yolk beaten 2 teaspoons cinnamon 1/4 teaspoon nutmeg 1/2 teaspoon lemon zest 1 prepared pie crust Mix spices sugar & lemon. Add the eggs. Stir in pumpkin and cream. Bake in preheated 425-degree oven for 15 minutes. Reduce temp to 350 degrees and bake 40 - 50 minutes. Ovens vary. Let cool 2+ hours. DRINK: Bourbon Cranberry Old Fashioned or, It’s a Leftovers Month Cocktail! NOTE: This drink is alcoholic, please drink responsibly. Ingredients (per each drink) • 1 tbsp. cranberry sauce • 1 tsp. (real) maple syrup • 1 orange slice • 2 oz of bourbon • 2 dashes of bitters • Club soda or ginger ale • Garnish: Fresh cranberries, or cherries and orange quarters Make it 1. Prep the base Combine the cranberry sauce, the maple syrup, the orange slice and the bourbon in a glass. Muddle. 2. Top it off Add the bitters, a couple ice cubes, and then top it off with club soda or ginger ale. 3. Garnish Sprinkle with fresh cranberries. Or skewer a cherry and wedge of orange on a toothpick, set on top. Enjoy!

I never had a childhood where my mom made fudge, or cookies, or candies during the holidays. No matter how hard I wished for it, for some reason it never happened. All of my friends used to tell me about their moms baking pies, cakes and the like, beginning at Thanksgiving and lasting until the new year with more goodies than they could possibly eat. We were a poor family but I don't think that was the only reason why we didn't have desserts for the holidays. I think my mom just didn't know how to make them until I was older. I was 10 or 11 years old when I decided to make us all some fudge for Christmas. Now, in those days almost every kid had a library card. If you're my age then I'll bet you had one too! That's how we entertained ourselves back then. During the summer months we looked forward to a trip to the public library because we knew that we would probably run into a few of our friends that we could sit with and whisper about the events that had taken place while school was out. As the holiday season approached, I checked out the biggest, heaviest cookbook that the library had on it's shelves. It was my book for two weeks and I intended to learn as many recipes as I could while I had it in my possession. I even had the option to renew it and keep the book for another two weeks if I wanted to. :) I made my first batch of fudge using that borrowed cookbook and it was horrible! I made a double batch and we had to eat every bit of it with a spoon because it was so runny. But, after a little practice I was able to make delicious chocolate and peanut butter fudge. This is the recipe I learned as a kid from a library cookbook. Ingredients: 3 cups - Sugar 3/4 cups - Real butter 3/4 cups - Evaporated milk 12 ounces - Semi - sweet chocolate 1 teaspoon - Vanilla 1 - 7 ounce jar marshmallow cream
